The good ol’ basic healthy dinner.
Literally my go-to when I don’t want to make something that is time-consuming or difficult.
I do change it up though if I have it more than once a week. I like to marinate and/or season the chicken in different things, mix it up, so it doesn’t seem like I’m eating the same thing all the time. I also like to change out the veggies. For example, a few days ago I made the chicken marinated in light Italian dressing and last night I used honey mustard. I do usually cook my chicken on the stove in a skillet because I don’t have a grill, but if you have a grill.. I highly suggest grilling your chicken, it is sooo much better. As for veggies, when I did the Italian dressing marinated chicken, I cooked up a bell pepper and onion. Last night, I made asparagus and broccoli with the honey mustard chicken. I usually make my vegetables with olive oil, butter, garlic, and salt, but every now and then I’ll add some Cajun or lemon pepper to switch things up. There are also things you can do differently with rice, add lime and cilantro, or Parmesan, mozzarella, & milk (not the healthiest, but so good), or add some herbs, or cook it in broth, or even throw some soy sauce on it.
There are so many ways to flavor up and change this basic meal. Have you ever heard people say “all you eat/make is chicken, rice and vegetables?” Because I have! And what they don’t realize is that I’m getting all sorts of different flavors, hence why I am still not tired of it…and that is coming from someone who gets tired of eating the same thing all of the time.
